There is nothing worse than driving to the campground, finding the perfect campsite, opening up the trunk, and finding that you forgot to pack your sleeping bag, a can opener, or worse yet, the tent itself! So, before heading out on your next camping trip, plan ahead and make a list of the absolute necessities you will need to bring with you to the campsite. Unless you are trying to become the next contestant on Survivor, you will want to take with you the necessary items needed to cook any food you brought, caught, or shot! Your camping cooking necessities should include a cooler, butane lighter, propane camping stove, extra propane, pots and pans, a can opener, and one set of dishes and utensils for each person in your camping party. Of course, do not forget about bottled water for drinking, cooking, and cleaning, as well as whatever food items you want to bring with you on your camping trip. Also, bring along a bag of charcoal to use in the campground grill!

Personal hygiene is another important concern when packing for your next camping trip. Unless you really want to be roughing it you should make sure you have the following hygiene items with you on all your outdoor adventures. You will need your tooth brush, toothpaste, soap, toilet paper, hand sanitizer, wash rag, towel, nail clippers, and contact lens solution. If you are really concerned with how you look (and perhaps smell) to the other campers, you might also want to include a hairbrush, razor, dental floss, and unscented deodorant. Anything you bring with you that has an odor will only attract bugs or animals to your campsite, so avoid scented products.

First aid and safety is the final thing you should worry about when it comes to your camping gear necessities. You never know what adventures your camping trip will bring you, so you need to be prepared for both the best and the worst. You can buy a premade first aid kit or put one together yourself that includes any medications you take, aspirin, antiseptic cream, burn ointment, sunburn lotion, sun block, hydrogen peroxide, snake bite kit, eye wash, Band-Aids, medical tape, gauze, scissors, and tweezers. For your personal camping safety, you should also be sure to pack a flashlight, extra batteries, compass, cell phone, utility knife, pen and paper, water filter, whistle, and a small toolkit.

Bringing these camping gear necessities will ensure you a comfortable and safe camping trip, no matter where or when you go. "Going out to Spain again? How wonderful!" many friends say to me.

Well, no actually it isn't. Yes I admit the weather makes a pleasant change from the dreary precipitation of North West England and I do have some great friends where I work in Spain but at the end of the day it's not a holiday it's work.

Dressed in a suit and tie travelling on a plane full of holiday makers to Alicante is depressing enough but then it's the taxi to the plant, a full days work in an air conditioned office followed by the taxi to the hotel. Back to the plant in the morning, another full day etc. etc.....get the picture? What's the weather got to do with it?

The one saving grace for me is the food. Spanish food ranks right up there with Italian for me in that it relies on the freshness of the ingredients and a simple cooking process. The only difference is the array of snacks available in the bars - Tapas.

Because of the simplicity of cooking and the variety, many tapas lend themselves to the barbecue smoker and have found their way into my free barbecue recipes web pages. Every day I try a new bar, new tapas, ask the barman how it is prepared and then punch it out on the laptop during the flight home. Maybe there is an upside to business travel after all.

The word tapas (plural) originates from the word tapa meaning a cover. In the bars and bodegas of Andalucia in the days before air-con, the barman would provide a tapa to cover his customer's sherry glass to stop the flies getting in. It wasn't long before the barman would place a little bread on the tapa and this is where the tapas evolution started.

Technically tapas are appetizers designed to be eaten in the bar with an aperitif before going home for the main lunchtime meal and of course the siesta. The tapas revolution now means that they are available all hours and many can be eaten at the same time to make a meal in itself and it's this concept that makes tapas ideal for the barbecue grill.

Some do need a little adaptation and take for example Esgarrat which is bacalao (dried salted cod fish) and roasted red peppers in olive oil. The sweetness of the peppers combines beautifully with the salt of the cod to produce a wonderful combination of flavours. Share a plate with friends and dip your bread in the oil - fantastic on a hot summer's day!

Preparation of Esgarrat take time (a week) and uses two basic techniques of barbecue smoking, firstly curing and then fire roasting so here's how to do it.

Take 150g or 6oz cod loin fillet (skinned) and place it in a polythene bag with two tablespoons of salt. Seal the bag and slam it in the refrigerator for a week. On the day of consumption, remove the cod loin from the bag, wash under the tap and slice thinly as you would with smoked salmon. Technically bacalao should be dried in the air but I find the process above more than adequate and certainly the best that I can achieve in a damp maritime UK climate.

When the barbecue charcoal is good and hot, place two red peppers on the smoker grill and roast until the skin is black and blistered and the flesh is soft. When complete, place the peppers in a polythene bag, seal it and allow to cool. When cool, remove the peppers from the bag and peel away the black skin and you'll be left with a beautifully soft sweet pepper that's ready for slicing. Cut into strips, place in a shallow serving dish with the salt cod and gorge it in olive oil - job done, give it an hour just to let the flavours mingle and you are ready to serve.

To give you a quick overview of what a charcoal barbecue grill is, it is simply a barbecue grill that uses charcoal as its main source of heat in order to cook the meat slowly and thoroughly. This is one of the reasons why it is favored over other methods of cooking meat. Cooking the meat in low heat insurers that it will be very flavorful.

In order for you to ensure that you are using your charcoal barbecue grill to the best of its ability, you need to know exactly how to prepare a grill before using it and also how to clean it once you have finished with it. In this article I am going to give you a few pointers you can use to prepare your barbecue grill for use with charcoal.

Do not put charcoal lighter fluid on charcoals that are already hot

The reason you don't want to put charcoal lighter fluid on charcoal that are already hot is because you may end up causing an unnecessary flare up. This can be very dangerous as it may cause you to suffer unnecessary burns. There is another method you can use that is much safer.

How to do this properly

What you want to do is pour a little charcoal lighter fluid over the charcoals and let it absorb for a few minutes. I would say about 10 minutes is optimal. If you do this you won't have to worry about trying to relight cold after a lighter fluid runs out and the fire dies. This way you will not have to worry about applying charcoal lighter fluid to already hot coals.

How to know charcoals are ready to use

A really good way to know that your charcoal is ready to use, then check them a few minutes after you have applied the charcoal lighter fluid and lit a barbecue grill. If you see that the majority of the charcoals are white hot and ashy then you know that you are ready to apply the meat for cooking. Applying the meat too soon to a charcoal barbecue grill will result in certain areas of the grill being hotter than others; this will cause your meat to cook unevenly. So make sure that the charcoals are white hot before applying the food.

A neat little trick

Another neat little trick you can use to see if your charcoals are ready for use is to hold your hand over your grill and see how long you are able to hold it there. If you are able to hold it there for more than 2 seconds then it is probably not hot enough. If you cannot hold it there for more than 2 seconds then it is hot enough.

Charcoal barbecue grills continue to be the one and only choice for a lot of people who are serious about barbecuing. The meat that it produces and the excellent flavor are absolutely classic and mouthwatering.
